Pesto Sandwich


Ingredients:

* 1 whole wheat roll
* olives
* ripe tomato
* 3-5 mushrooms
* pesto: fresh basil leaves, 2-3 garlic cloves, olive oil, walnuts

Directions:

For the pesto- Place the basil, garlic, olive oil and walnuts in a food processor.

Spread the pesto on both sides of the roll. Slice mushrooms and saute them in some olive oil. Slice tomato and olives into rings. place all in the roll.

Enjoy.

(could be put in toaster oven for a few minutes)
