Scrambled Tofu

Ingredients:

* 1/2 block firm tofu (I prefer fine herb, but whatever you like
will do)
* 1/4 cup broccoli florets
* 2 green onions, chopped
* 1/4 cup green pepper
* 1/3 cup salsa, or more to taste
* salt & pepper to taste

Directions:

Heat a small amount of oil on a medium frying pan, and crumble tofu into
pan. After about 5 minutes, add vegetables (you can add other vegetables
too, of course, this is a great way to get rid of anything waiting to go
bad in your fridge). I usually wait about another 5 minutes, and then
add the salsa, stir, and remove it from the heat (I like the veggies
still crunchy, so leave it a little longer if you prefer them soft). I
don't really like eating breakfast, but this stuff is awesome.

Gingered Green Tea Granita

Ingredients:

* 4 cups water
* 1/2 cup granulated sugar
* 1 tbsp gingerroot, grated fresh
* 4 bags green tea or equivalent loose

Directions:

In saucepan, combine water, sugar, and ginger. Bring to a boil. Add tea.
Cover and let stand for 10 minutes.

Strain mixture into 8-inch cake pan. Freeze for 2h. Stir. Return to
freezer for another 3h, or until mixture is slushy but not frozen solid.
(if it freezes, leave out for 5- 10 minutes and mash with a spoon) Spoon
into dessert bowls.

(To make gingered green tea, peel gingerroot before grating and omit
freezing step)

I've modified this recipe with 1/3 tsp Stevia instead of the sugar.

Serves: 4

Preparation time: 20 minutes

Funnny that you mention taking the T to Rockport,
because I went to Gloucester for the St. Peter's
festival last weekend, and had a pretty strange
experience on the way back.
I had been drinking all day, and so by the time that
we were pulling into north station, i had to go pretty
bad, so I was waiting by the door.
the ticket lady opened the outside door just as we
were pulling in, and fell out of the damn train! her
foot had been caught on something, and i clearly heard
her skull hit the pavement.
so, i jumped out of the train after her, and there was
blood everywhere. just gushing out of her head.
she was breathing, but I couldn't get her to talk to
me, and by that point, the train had stopped, and
people were getting off. i was screaming at them, and
to me, it felt like everyone was just standing there.
finally, one of the T guys came, and the paramedics
showed up, but dude, it was scary. so, that was my
strange saturday on the commuter rail.
when i'm not stopping other people's heads from
bleeding, i like to read alot-HP5 has me enthralled at
the moment, and i like to be outside. i can really be
entertained doing just about anything, as long as the
company is good.
better run, i have an undulating mass of laundry,
